Veggie wrap

Ingredients 

Homemade tortillas : 6 – 8

Fresh veggie salad : 4 cups (I’ve used shredded cabbage, red onion, tomatoes, jalapenos, avacado slices and fire roasted sweet corn)

 Smashed red baby potatoes baked in an oven or black beans or any other protein

Lemon juice : 1 tablespoon

Salt : as required

Cilantro to garnish 

Sauces

Vegan chipotle aioli 

Greek yogurt/ sour cream

Method 

Mix the chopped salad with lemon juice and salt and keep aside for 15 mins.

To assemble 

Take a warm tortilla and add a couple of smashed potatoes/protein.

Top it with a generous amount of the salad.

Drizzle with the sauces and garnish with chopped cilantro.

Serve immediately.
